N2 - Carotenoids are the most widely distributed pigments in nature. They are produced by all photosynthetic anoxygenic bacteria, photosynthetic oxygenic cyanobacteria, and by some species of non-photosynthetic bacteria. Many eukaryotes, including all algae and plants, and some fungi also produce carotenoids. Carotenoids play an important biological role in non- photosynthetic tissues giving color to fruits and flowers, and even in non- carotenogenic organisms such as mammals, birds, fish, insects, and crustaceans. Presently, carotenoid research encompasses very diverse areas including physiology of plants and microorganisms, food science, chemical synthesis, biotechnology, and medical investigation, among others. This report introduces the study of carotenoids, reviewing physical and chemical properties, chemical synthesis, biosynthesis and regulation, genetic manipulation of producing strains as well as industrial and medical applications of carotenoids.
